There is a series of postings on the website www.plain-military.com in the modelling section on building bar armour on CVR(T)s. There are diagrams of the panels included.
I recommend joining the site as it is full of high quality pictures of modern kit on Salisbury Plain.
I don't know of any commercially produced bar armour in 1/35, but then I am a 1/76-1/72 scale modeller.
